Gluten-free Peanut Butter Cookies

A long time friend of mine, Samantha Yep – Shaffer sent this recipe to me. It is super simple, only three ingredients! My girls made them a couple nights ago and we took them to another friend’s house. At the end of the evening all 15 cookies where gone. This proves how yummy they are.

1 large egg
1 cup sugar
1 cup of peanut butter (non-brand name, brand names are, too oily)

Preheat oven to 350. Mix all three together.  make one inch balls, then place them onto your cookie sheet (I line mine with parchment paper). Gently press on them with a fork to create a hatch pattern. Bake 10 – 15 minutes depending on your oven. Do not over cook take them out as soon as you see them turning golden on the edges. Place on a cooling rack. I then sprinkled a little sugar on the top.

Samantha suggests that for fun you can add different types of Hershey Kisses to the top after they come out of the oven. Butterscotch for Thanksgiving and Chocolate Mint for Christmas. Now that we know these are a hit in our home, next time I will add some kisses. ♥
